This work is the collaboration of Pavoni with Chef Gianluca Fusto. The ring is designed for cutting labor out of preparation and making the pastry taste and look perfect.
The holes make your pastry cling to the ring during baking, the grip preventing collapse of the pastry edge.
The clinging will not make it hard to remove the pastry--as long as you grease the ring before it touches the pastry dough, the ring will separate from the tart before the baking is over.
